Those dedicated servers are a bit much for my needs at this time. Was looking for a entry level server, or should I just get a VPS?

If you are just starting I think a VPS would be a good option.

Get LxAdmin, it uses the least resources.

I'm not quite just starting. I get about 2k uniques a day or so.
